National Sake Fair 2025 in Osaka Ibaraki Prefecture Booth ⑥ Takemura Sake Brewery is a long-established brewery with a history of about 250 years in Joso City, Ibaraki Prefecture. ◉Kyo no Yume Junmai Ginjo Sake rice is Gohyakumangoku. The aroma is slightly floral. The aroma is a bit floral, with a clean, refreshing quality typical of Gohyakumangoku, but there is also a fruity quality to it. This one is made with local rice and is made with Ibaraki Prefecture in mind. ◉Kyo no Yume Daiginjo The rice used for this sake is Yamada-Nishiki. The sweetness is followed by bitterness. The sweetness is also full-bodied. A bit of complexity. I wondered if the person who served me was a family member of the brewer. When I asked why Kyo-no-Yume was named after Ibaraki Prefecture, they told me that there was a book written by Junichiro Tanizaki and that his grandfather was a drinking buddy of Tanizaki Junichiro, and when they were thinking of a name for the sake, he told them to use it. He said his grandfather was a drinking friend of Tanizaki Junichiro, and when he was thinking of a name for his sake, he told him to use it and named the brewery after him. It seems that Daimaru sometimes carries it.

National Sake Fair 2025⑮ Ibaraki Prefecture⑥ Takemura Sake Brewery in Joso City! I told him that I drank a sake called Ruri from this brewery last year and he said it was a Fukuro-hozuri sake 😳. I thought it was amazing that it's not such an expensive sake, but it's still a bagged sake! I drank Kyo no Yume Junmai Ginjo Polishing ratio 55% Gohyakumangoku Sake meter value +2.0 Acidity 1.4 Amino acidity 1.4 Alcohol 15%-15.9%, 1958 yen Slightly sweet and clean taste. Kyo no Yume Daiginjo Rice polishing ratio 40% Yamadanishiki Sake meter value +3 Acidity 1.4 Amino acidity 1.3 Alcohol 15%, 3,960 yen It tastes a little lighter than Junmai Ginjo. Do you prefer Junmai Ginjo?

We had some hot sake sold at a campsite in Ibaraki. We had already had beer and wine, but it was too cold to drink anything else, so the warm sake soaked into our stomachs and made us feel warm. A dream in Kyoto? In Ibaraki? No, no, it was a sake brewery in Ibaraki. https://www.nap-camp.com/ibaraki/10145

Shimousa tasted sake from Mizukaido. The sake is probably a commissioned brew, as it is made by a processor. The taste is light and the umami underlies the mild flavor. It was a refreshing and delicious sake.

Brewed by Takemura Sake Brewery in Joso City, Ibaraki Prefecture Kyo no Yume Honjozo Shiboritate Nama Sake What a very nice name! After the fruity sweet flavor, it finishes quickly with an alcoholic bitterness! It's quite quite good. A little high in alcohol, but you don't feel that much. A very strong sake. This is what I got today. Thank you so much 😂.
