Yamatsuru is the closest sake brewery to my house, but I haven't had much of it lately. The last time I drank it I got the impression that it was peculiar and not really my cup of tea, but not this Junmai Daiginjo!
Clear and fruity, good balance of flavors. It's also gorgeous😋.
The price is reasonable for a Junmai Daiginjo, but I think it's worth it🧐

It has the flavor of an old sake, with a spicy aftertaste.
The best one was easy to get.
It was usually sold at the store I went into when I was in the mood (drink up bottle).
If you find it, try to drink it.
I'd recommend drinking it a little colder than room temperature to get a better taste and more variety of flavors.

The aroma is of lactic acid and alcohol. It also has a faint muscat-like taste.
When you put it in your mouth, a beautiful sourness comes easily. After that, the umami and a slightly subdued bitterness spread rapidly. The sourness, umami, and bitterness continue until the end, and after swallowing, they linger on the tongue. Finally, a hint of sweetness appears. When you swallow it, there is a feeling of being stuck a little.
I left half of it in the bottle and opened it again three days later. Then, it had settled down a lot. It's getting tastier!
The taste is mainly acidic, and it's a bit spicy. It goes well with soy sauce flavors in general. It's good with sashimi. It also goes well with simmered dishes and soaked vegetables.
It's not my favorite direction, but it's a good sake.
If you compare it to Ghibli, it's like Taeko from "Omohide Pororo Pororo", the main character. The main character is not a 5th grader, but a 27 year old. She is 27 years old, not a 5th grader. This work depicts something like a romance, but it is not a sweet romance, but an adult romance with a slow and delicious taste.

Added Sweet but spicy... Strongly assertive in the mouth... Pretty label... Label fraud... I feel like this is the kind of jajama-type deliciousness that is possible.
