Ah, this is Ehime's sake.
You can feel the weight of the rich oak. Heavy and delicious, but somewhat difficult to drink. The aftertaste is long. One glass is enough for the sweet taste.
In a word, it is a sake with a heavy koji aroma, and you can feel the bottom power of Ehime.
The third sake of the Ehime sake tasting comparison is from the town of Elkawa in Ozu City. We had just recently visited Ozu Castle and Garyu Sanso in this area known as Ehime's "little Kyoto. We couldn't miss the sake from Ozu because of that. Compared to the other two, this sake has less character, but is a beautiful junmai ginjo. It is crisp and light. It has a nice smooth taste. The first taste is fruity, with a melon-like flavor. The sake level is -10, but it does not feel that spicy.
It's got that crazy grass feeling! ...or a barrel! Crowdfunding, I couldn't make it but this brewery is working hard to recover from the torrential rain in western Japan.

It was delicious.
It has a mellow mouthfeel without any peculiarities, and you can feel a soft sweetness and umami after a quick sourness. It is a sake that you can feel the flavor of rice.
The aroma of koji! It's delicious.
Apparently, only 800 bottles of this sake are made each year. I found out after I opened it.

This sake is brewed in Ehime Prefecture using Shizukuhime and Matsuzamitsui as the main ingredients, and using the rich underground water of the Elk River in our own brewery.
After bottling, the sake matures and becomes mellow in flavor.
Rice polishing ratio: 60%.
Alcohol content: 16%.
