The aroma of koji! It's delicious.
Apparently, only 800 bottles of this sake are made each year. I found out after I opened it.

This sake is brewed in Ehime Prefecture using Shizukuhime and Matsuzamitsui as the main ingredients, and using the rich underground water of the Elk River in our own brewery.
After bottling, the sake matures and becomes mellow in flavor.
Rice polishing ratio: 60%.
Alcohol content: 16%.

何故か、酒蔵が登録されてなくて選択できませんでしたが、愛媛県大洲市の養老酒造さんです。
飲み口は、すごく軽めで、口をつけてから飲み切った後まで、一本筋の通った米の味がします。
後味はさっぱりです。
わたしには少し角が立つ感じに感じられましたが美味しいことには変わりません。
気温22度、よく冷やして冷酒で頂きました。
本日も良いお酒でした。
