The last one is Shuho. The photo of the back label that I took has gone away due to the timing of updating my phone. Although it claims to be a +10 super-hot sake, my first impression is that it is not that hot, and I can feel the goodness of the tailoring in the way it finishes with pleasant acidity and bitterness while retaining the necessary and sufficient umami. This is my first visit to Gakku, and I recommend it for its high standards in terms of atmosphere, cleanliness of work, taste of food, sake lineup, pricing, and personality of the owner. It has a refreshing sweetness and acidity, a soft and rounded aftertaste, and a refreshing acidity and bitterness at the finish, making it quite easy to drink. This is good! I had a good portion made into sashimi, but it was still a slender size. It was a bit more fatty, but it is a dish to keep in check in early autumn. Mimuro hiyaoroshi I saw this at the liquor store the other day. The aroma is moist and restrained, with a hint of ginjo. The first sip has a sweet acidity, followed by a sweet, sour taste. The aftertaste is fruity and warming, and finishes with a gentle acidity, bitterness, and a hint of astringency. This is a well-known brewery in Miwa. It is very tasty! It has a profound sense of heaviness, which is quite different from Tojo's refreshing taste. The aftertaste is fruity and fruity, but the acidity and bitterness are quickly cut off. In my opinion, I prefer this one. The price of 1,200 yen for a set of wines to compare is also good value for money. The food is also reasonably priced, and the owner does a great job. On the first day of a three-day weekend last week, I visited a cemetery in the rain, and on the middle day, my wife and I went on a lunchtime drinking tour. On the way, we stopped by Moritami Sake Brewery, Sendai's only sake brewery, for a sweet sake break and to visit Moritami Inari on the premises. We will have a set of Jikin's Tojo Yamada-Nishiki and Yoshikawa Yamada-Nishiki to drink with sashimi and sea squirt kimchi. First, let's start with Tojo! The aroma of ginjo is wonderful! The aroma of ginjo is wonderful! The balance of sweetness and umami is excellent, and the acidity and bitterness at the end of the finish is light and refreshing, making it easy to drink.
