On the first day of a three-day weekend last week, I visited a cemetery in the rain, and on the middle day, my wife and I went on a lunchtime drinking tour.
On the way, we stopped by Moritami Sake Brewery, Sendai's only sake brewery, for a sweet sake break and to visit Moritami Inari on the premises.
We will have a set of Jikin's Tojo Yamada-Nishiki and Yoshikawa Yamada-Nishiki to drink with sashimi and sea squirt kimchi.
First, let's start with Tojo!

The balance of sweetness and umami is excellent, and the acidity and bitterness at the end of the finish is light and refreshing, making it easy to drink.
