Today is Komiya Arisa's birthday.
I felt like drinking Kurosawa when I thought of it. It has a refreshing aroma like ramune and the delicious taste of Yamada Nishiki, and I've had many cups of it.
It is light at 12% alcohol by volume, making it very easy to drink. And yet it has the umami of junmai (pure rice) and the acidity of nama-shoto (sake yeast). It is a magical sake!
Following last night's unfiltered, unfiltered, raw sake, this is Miyamanishiki hiyaoroshi. The fruity aroma is still intact, and the crisp, dry finish makes it a good choice for a mid-meal drink.
Sake made with 65% Yamae-Nishiki polished rice from Sakuho-cho. It is a sake made by the ㊙️process of 12% ABV even though it is a pure sake. It is light but has a strong sake flavor and umami, so to speak.
