Yuyu Chishu was created by Saga University. It is brewed with yeast from the tideland of the Ariake Sea. The flavor that follows afterwards is amazing. It's the best sake I've had recently.

The nigori has a nice acidity. The nigori has a nice sourness and the rare one has a clean taste. It was easy to drink.
Izumi Nishiki from Fukuchishiro Shuzo, famous for Nabeshima.
According to the owner, it's a fantastic cheap sake that is rarely seen and can't be found anywhere. It's only sold in a few stores in Saga. I'm not sure if I'm going to look for it or not. It tastes like a cheap, old-fashioned sake, but if you drink it lukewarm, you can't stop drinking it. Licking the salt and drinking it is indescribably good. It's the kind of sake that drinkers can't stop drinking.

You can feel the scent of wine, but it doesn't spoil the crisp taste of Toichi.
It's an unusual taste, which is good once in a while.
The owner recommended the nama yeast starter, but I felt it was too heavy on the palate and had a sour taste, so it was not my favorite.

The sake rice is Aizan. Because it is less polished, the flavor is thicker.
It has a strong flavor, but strangely it does not interfere with food. It has a strong sourness and sweetness, so it goes well with spicy and salty dishes.
The price is reasonable at around 3,000 yen for a bottle, despite its high quality.
Nabeshima is my favorite sake from Saga.
Since it is a small brewery, there are not many liquor stores that have Nabeshima. So I buy it as soon as I find it.
I happened to find this one when I went to Ogi City in Saga Prefecture to buy some carp wash.
I had never seen Nabeshima with this label before, and the price was just over 1,800 yen for a bottle, so I bought it right away.
The sake rice is Aizan. I was surprised that it really existed at such a price. I was surprised. The taste is not too strong and does not interfere with the food, but it has a good flavor and is easy to drink. We enjoy it with carp wash.
I asked other liquor stores that sell Nabeshima, but they said that Nabeshima's regular sake was rare and disappeared soon.
I went to the same liquor store again, but they changed the sake rice to Yamada Nishiki. Bummer. I wonder if I can find Aizan's ordinary sake again.
I received this after winning a sake campaign from Saga Prefecture. The extra socks are fancy and I'm wondering when I'll wear them, but the sake was very good. That's Banrei.
It's fruity, refreshing, and has a good balance of acidity and umami. I wonder if it would go well with something with a strong flavor such as simmered dishes.
