Hiyoshi Sake Brewery in Wajima.
Hoping that one day I will be able to drink the new sake.
It is a refreshing drink.
It makes my heart hot.
It seems rounder than when I drank it in September.
Hachikan Nishiki.
No twisted impression at all,
It has a mellow and thick mouthfeel.
I liked the new BY Hachitan-Nishiki,
but this one is like a heavier version with the same flavor.
Maybe I should have kept it as a vintage.

After 3 months of aging
The initial hit is strong, with some acidity.
Rounding off after 20 minutes.
At 17°C of alcohol, it has a sinking sensation in the stomach.
The aroma is also from the initial hard sour smell,
the sweetness of amazake-like sweetness joins and mingles with it.
Sourness remains on the tongue.

When first sipped, it had a tingling sensation and a momentary sourness.
Soon after, the taste became familiar, round and familiar in feel.
Still, it feels like a classic sake through the throat.
