I thought it might be sweet, as "fully matured raw" sounds, but the flavor of maturity comes through more quickly. However, it also has the freshness of nama-shu, which is a strange feeling. I was told that the sake is bottled and matured in a refrigerator for six months. I was also smitten by the fact that this sake brewery seems to be a Gundam lover.

Aromatic Junmai. It has a great balance of gorgeousness and freshness. I'm a beginner and can't tell the difference in rice yet, but it is made with Omachi, a sake rice produced in Okayama Prefecture. I would like to compare them with the same sake rice.

Crisp and fresh. And the aroma is not sweet, but mild and nice. It may have broadened my image of Junmai Daiginjo. The alcohol content is low, which is great for beginners who want to drink a lot of different types of sake.

I am a sake super novice, and I personally adore Akizuka. The rice flavor is amazing. It was served cold, but it might have been delicious lukewarm in the cooler weather.

I was served it with an order for a "standard" kind of sake. It tastes dry, like an orthodox summer sake. It seems to go well with any dishes. I drank it with bitter gourd stir-fry.

Ideal for the first drink. I would recommend it to people who do not usually drink sake. It is like a sparkling wine and would go well with Italian food. The fermentation in the bottle is too active, so be careful not to blow the cork when opening the bottle. (It flew off beautifully.)
