Quest4-Ohyama T00-Baby, or the first Quest4, from Kato Kahachiro Sake Brewery, known for Daisen and Jyusui? It's a fruity sake with a hint of strawberry in the raw, and a strong sweetness, but it's a delicious sake. The sake became even more fragrant when warmed up, giving the impression of strawberry jam. The alcohol content of 17.5 is quite high, but the flavor is strong enough to make it a competitive sake.

The Koshigaya-shuku nigori sake was just released today. This sake is made by Kamaya in Kazo City, Saitama Prefecture. From the top clearing, the sake is full of the flavor of the rice, and when mixed, you can taste the sweetness and flavor of the koji. The aroma opens up even more when the sake is warmed up, and you can feel the rice flavor even more. 300ml goes by in a flash!

Eimanju from Gunma's Shimizuya Sake Brewery. A 2018 vintage sake, right after it was sealed, it was an uninteresting and boring sake that I couldn't taste, but after letting it sit in the fridge for a while, it swelled up nicely and is a monster of a sake. It's not quite a white wine, but it's beautiful and delicious. I'm going to let it sit for a while after this and enjoy how the flavors change.

Shigemasu is a sake made by Takahashi Shoten in Yame City, Fukuoka Prefecture. Its junmai daiginjo nigori namaizu. The supernatant is clean, clear and sweet sake. When you mix the nigori, the sweetness of koji comes out like sweet sake. Surprisingly, it is good with spicy salami. The strong spicy flavor of the meat and the richness of the oil is wrapped in the sticky sweetness, and it is a sake that combines well.

It's been a while since I've had this Shinsei Yono-tori 10th Anniversary Sake. It's the one that was left at room temperature for a year after it was sealed and then stored in the fridge. It's got the aroma of oak barrels, the sweetness of a noble sake, and the complex flavors of aging it at home.
