Eimanju from Gunma's Shimizuya Sake Brewery.
A 2018 vintage sake, right after it was sealed, it was an uninteresting and boring sake that I couldn't taste, but after letting it sit in the fridge for a while, it swelled up nicely and is a monster of a sake.
It's not quite a white wine, but it's beautiful and delicious.
I'm going to let it sit for a while after this and enjoy how the flavors change.
