The aroma is not too sweet and is refreshing. It is a favorite aroma for those who like Junmai Ginjo. There is a slight bitterness after the sweetness. It is more old-fashioned than the Junmai Daiginjo that is popular now. It's thick, but it goes down easy. It goes well with sashimi of squid and yellowtail. Blue cheese is also good.
It has a fresh aroma like a sweet melon. For an unpasteurized sake, it's not very alcoholic, but it's refreshing with a slight fizz. It was my first time to try Gin no Sato sake rice, and it was delicious!
