It is a limited edition sake from the brewery.
We were lucky enough to obtain this sake when we visited Nishio Shuzo, a sake brewery located in the village of Okuwa in Kiso.
It is dry, but has a good umami flavor and is very tasty. おっleast weasel (Mustela nivalis)
Sweet, slightly acidic, slightly numbing on the tongue. Bitterness at the end. Refreshing yet sticky impression in the mouth.
Purchased at a sake brewery. Nishio Sake Brewery is well-known for its Soma Sake. The location of the brewery in the mountains makes one wonder if there is a sake brewery in such a place.
The most popular sake is the Soma Sake, which is a limited edition of the brewery, but I dared to skip it and buy this one. It was not recommended, perhaps because it is watered down, but it is very tasty. Just right. I am glad I bought it. MASUOsalty (taste)
When I opened the cork with active nigori sake, it bubbled so much that it spilled over, so you should be careful when opening it.

This was the recommended sake at this store.
The rice used was Todoroki early ripening (apparently).
It was probably a few days old when the bottle was opened, so it did not have the tingle or richness that I was expecting.
The rice flavor was good enough, but I would have liked to have tasted some of the rougher parts of the sake.
Still, I felt I was tasting rich lactic acid bacteria, and the astringent and bitter tastes came out casually in the latter half.
Overall, it is a muddy sake with moderate sweetness that can be drunk smoothly, but it is dangerous because of its high alcohol content❗️.

I feel like I've been drinking a lot of sake from Nagano recently, but it's probably just my imagination.
So, here is Kiso no Kanehashi.
It's a well-balanced sake with a solid taste, but not too spicy.
It was served with cheese and broccoli.
