A gift from a friend from Japan. It is high in alcohol (17%), but the texture is so smooth that you don't feel it. I wonder if it is because it was stored in the snow. The taste is medium, and although it is a daiginjo, the ginjo aroma is subdued and quite well-balanced.

Snow Storage Daiginjo A senior colleague of mine gave me a bottle of a sake he's been into lately to try. As the description says, the tank was buried in the snow to mellow the flavor, the ginjo aroma is subdued and the taste is mild with strong acidity. On the second day, the acidity settled down and it became even mellower.

First Akita sake in a long time! It is said to have a mild taste due to slow maturation in the snow. It certainly has a mild taste and goes well with sashimi!

This is a daiginjo "stored in snow" from Kitashika in Odate City, Akita Prefecture. It is a delicious, mellow, easy-drinking daiginjo-shu that has been matured in a tank buried in snow.
