Snow Storage Daiginjo
A senior colleague of mine gave me a bottle of a sake he's been into lately to try.
As the description says, the tank was buried in the snow to mellow the flavor, the ginjo aroma is subdued and the taste is mild with strong acidity.
On the second day, the acidity settled down and it became even mellower.
