The fourth glass of sake was somehow heated as a result of a sake discussion with the customer next to me and the proprietress. Since the store sells Aomori sake, I was recommended Iwakigawa Josen (not registered in either SAKE WA or SAKE TIME) by Ozaki Shuzo, famous for Ando Suigun (Ando Suigun). It is a honjozo sake. The aroma on the nose is mildly sweet and sour with a hint of alcohol due to the fact that it is a heated sake. The palate has a refreshing acidity and a full-bodied sweetness. It was a nice, clean, crisp heated sake. We drank some at room temperature, but the sweetness and spiciness increased a little more when the sake was heated.
