It is mellow and has sweetness and umami. On the other hand, it has the sharpness and dryness typical of sake, with a strong bitterness. It was not so easy to drink, perhaps because it was the second half of the meal, or perhaps it was simply not to my taste, but it was relatively easy to drink when paired with spicy fresh ginger.
