Timeline
もふりーとHakkaiyama Junmai Daiginjo. I looked in the fridge to see if there was any sake not listed on the menu. I wanted to try the Junmai Daiginjo, but it was too light on the palate, and the aroma was a bit apple-like. It's so good! もふりーとToday, we had dinner at Chinahige Bar, which is now called Chinese Restaurant Chinahige. The other day, the restaurant changed its business format from a popular izakaya to a machi-chuka (traditional Chinese restaurant). However, the sake lineup remains the same. Thank goodness for that.
The first one is Shichida Junmai Seventy-fifths polished and unfiltered R1BY, which has been aged for four years, or so they say. It has a very strong flavor, yet is quite refreshing and light to drink. It's good. もふりーとA local version of our famous local sake, Juemon Junmai Unfiltered Unrefined Genshu.
It was at the bottom of the bottle, with a little less than 2 gou left, so it was at a good ripeness. The aroma is fruity, as strong and clear as Yamori's. The flavor is firm, with a hint of umami. It has a strong umami, a slight acidity, and a lingering astringent taste. It is an easy-drinking sake. もふりーとMutsu Hachisen ISARIBI Special Junmai Hi-iri. The concept of this sake is to be enjoyed with fresh seafood, but sorry, only land-based seafood is on the table. A firm bitterness comes in first and spreads over the tongue. It is an interesting sake that is mainly bitter, with the alcohol coming in from there and leaving the throat. もふりーとToday we will be visiting our local Agohige Sake Bar for the first time in a long while to have some sake.
Kame-ling Mannen Junmai Ginjo Genshu Gokatsu. Even though it is a pure sake, it is so rich and full-bodied that you would think it was a junmai ginjo (......!?). It is so rich and full-bodied that it is almost like a "Jungin" sake. In other words, it has a twisted flavor. It is a fun sake to drink.
Oh, it goes well with honey mustard sauce. もふりーとJuemon Junmai Unfiltered Unrefined Unmixed Sake from Toshimaya Shuzo, a local Higashimurayama sake brewery.
Although only Yamori has become famous, this sake also has a strong flavor. It also has a pleasantly mild taste. もふりーとKubota Beniju. We had this at a local izakaya (Japanese-style bar) in Kumegawa.
It is still delicious, and it soaked into my tired body. When I drink this kind of sake and feel this kind of sensation, I realize that I must have been dry. RecommendedContentsSectionView.title
