Today, we had dinner at Chinahige Bar, which is now called Chinese Restaurant Chinahige. The other day, the restaurant changed its business format from a popular izakaya to a machi-chuka (traditional Chinese restaurant). However, the sake lineup remains the same. Thank goodness for that.
The first one is Shichida Junmai Seventy-fifths polished and unfiltered R1BY, which has been aged for four years, or so they say. It has a very strong flavor, yet is quite refreshing and light to drink. It's good.
