Oh-Roku Brewery is a small sake brewery located in Shimane Prefecture. The brewery is not open to the public, and the sixth generation brewer, Mr. Takeki Ishihara, is stoic in his approach to sake brewing.
The sake is made in its natural state, without filtration or heat treatment, and is thoroughly controlled at a negative temperature.
The sake is dry, refreshing, and maintains a beautiful acidity.
