Great acidity. Gorgeous and elegant, with a sense of balance rather than sweetness. The ultimate sake. Gave me goosebumps when I put it in my mouth.

I was reminded again that Kinmon Nishiki itself is a rice with very strong habits. It has a very strong smell, which makes it difficult to make a good flavor. In a sense, it's like "a president who is 90 years old but still has the same spirit! In a way, it's like "a president who's 90 years old but still has the power!
In the Genmai series, which is full of beautiful flavors, the nuka smell that can't be erased no matter how hard you try, even though it's polished to 55%, gives the flavor a range in a good way. It's got a country feel to it, or something thick and unpretentious.
It's not the same as the robustness of a traditional sake brewery or Yamahai, but it has a powerful taste. It is interesting. It has a depth of flavor that makes you want to sip it again and again.

We made it! LOL I've hit a temporary closure about 4 times and drank tears for about a year.
The longed-for Kawanakajima, with no drinking or eating for five hours. Misamanishiki, after much deliberation. Sweetness, acidity and freshness, all easily balanced with this rice. No complaints.
