Ippodo Isshu Junmai SEN Sake brewing, unfiltered Polishing ratio: 70 Yeast・No yeast added Brewing water: Soft water Mother brewing: Ikarashi Alcohol: 16.6 Sake meter: +7.0 Acidity: 1.7 Amino acidity: 1.3 Temperature: 10 to 15℃, or lukewarm Sake rice: Yamada Nishiki from Kasai City, Hyogo Prefecture This is a hometown tax return gift (Kasai City, Hyogo Prefecture). Together with SEN Junmai Daiginjo, the price is 25,000 yen. (Assuming it's equivalent to 30%, that's 7,500 yen for two bottles?) It's good. That's Tomikunishiki (I'm just a fan). At the first sip, there was a light, gassy feeling. At first, it was sweet and sour, and gradually, umami and spiciness occupied the perfect balance. It is sharp and does not linger. It's good. After drinking for a while (about an hour), the umami becomes stronger. I feel it. It's good. It seems to go well with dashi and soy sauce dishes. Oden was the right choice. You can enjoy both junmai and junmai daiginjo sake from different breweries with the same brand. I'm looking forward to the Junmai Daiginjo.

Junmai Ginjo Suidama Yamadanishiki Contents/720ml Rice polishing ratio / 50%. Alcohol / 16 degrees Cold sake Stable and delicious. It has a mild aroma and a moist flavor. At the end of drinking, you will feel a slight bitterness, which is addictive. The usual saki-squid is good as a snack, but chocolate goes well with it. No carbonation

Junmai Daiginjo Icenonami Contents/750ml Rice polishing ratio /50 Alcohol / 15 degrees Cold sake This is one of the "Saku" series. It is a stable choice, because I think that there is nothing wrong with "Saku". This sake has a gorgeous aroma and a gentle sweetness. Unusually for a transparent sake, it is delicious even 3 or 4 days after opening, so there is no need to rush to drink it. You can enjoy it slowly and little by little every day. For drinking at home. (Although we say so, it's so good that you can actually finish it in 2 days.)

Packing slip sake Dewa Sanzami Junmai Daiginjo Tamba-kumi, Bottled fire Rice polishing ratio / 50%. Alcohol / 15 degree Cold sake, -5°C to 5°C I bought it by the package, but it was a good decision. I like it from the aroma. It has a tingling sensation on the tongue and a mellow sweetness. It's a definite repeat. If you can, you want to drink it on the same day, or at least the next day, because after a week, it will be too sweet to drink.
