Pleasantly surprised and happy. Our cook served us this nihonshu on the house, next to my umeshu drink @ Ferment, Copenhagen. The nihonshu itself is very mild and invitin, without being ever boring. You can't taste the alcohol, but you can taste the rice. I could serve it for both beginners and japanophiles among my friends.

A beautiful red! Made from red rice. The sake brewer is female and well known (and hyped) and loved for her very personal brews. This one was extraordinary fruity and just the right amount of sweet. Not very "ricy" at all, but clearly not like a port or dessert wine, either, still a nihonshu. I loved it. Both my drinking companion and was reminded of strawberries, and it wasn't from the colour alone.

Served hot. I asked for something very "ricy" and unique served hot, since we just came in from the cold. It wasn't that "ricy" to my tastebuds even though it's made on (mostly?) unpolished rice. But quite umami. I saw someone else describe it having notes of cheese and probably being good with cheese, and I agree with the second part. A very nice one-time experience.
