MURASHIGE Junmai-shu, dark mellow and dry.
Purchased at the Takashimaya Sake Festival last September. The brewer was probably the person I talked to the longest at the booth.
It is a strong sake with 80% polished rice and No. 8 yeast. It is an unusual sake, rich but dry 🤣.
I heard it is very hard to sell at special dealers.
It is served cold.
The color is quite recognizable yellow. They say it is aged at low temperature, so I guess it is Maillard.
The top aroma is caramel-like and honey-like. I quite like the aroma 😋.
The mouthfeel is slightly tart. Immediately you can feel the acidity on the tongue.
The taste is sour at first, but when swallowed, a rich, mellow sweetness spreads on the palate with the aroma of burnt caramel that passes through the nose. It has a rich, mellow, sweet-savory flavor and a slight sense of maturity.
After that, the acidity tightens up again from the tip of the tongue, and there is a slight spiciness that gives it a slight kick.
The sourness is impressive and does not give the impression of being dry.
It's a very interesting sake, but it's a shame they won't be making it any more this season 😭.

MURASHIGE SHUZOH Brewing Company [MURASHIGE] [EIGHT KNOT] Yamaguchi Prefecture / Iwakuni City
This brewery has the largest cedar ball "Reiro" in Japan and has revived "Kyokai No. 8 yeast".
I think this is the brewery I had the longest conversation with this time.
It had been to a sakesp before and I tasted it but was not impressed, but about two years ago, they changed their production and made a big change to become a very unique brewery.
It was so interesting that we visited a second time right after we met up with bouken.
Every time, the brewery staff explained to us, "It's dry, but if you think it's normal dry, it's not at all, so please drink it with that in mind" 🤣.
MURASHIGE Authentic dry.
Sour but spicy.

It is rich and deliciously sour, but spicy.
MURASHIGE Tokusen Dry Mouth
Sour and lactic acidity added to the deliciously sour taste.
MURASHIGE Extra Select Dry
Sourness is well balanced with a hint of lactobacillus acidity.
MURASHIGE is a company with a perverse obsession with 80% rice polishing ratio and No. 8 yeast. The sake is made with a different method, such as using a sake yeast, using different rice, and fermenting at low temperature for a long period of time.
It seems to have been made using makuake's kurafan.

Nemuchi-san wanted us to visit the Murashige Sake Brewery because he wanted us to try their sake. Nemuji-san is a perverted sake fanatic who wants us to drink it because it has a strong taste.
Since the loss of Kusaka Musou, we have rarely seen this sake brewery. When I drank it at a tasting at Takashimaya before, it was a time when the Kusaka Toji had moved to a new company and brought the rest of Kusaka Musou and Kinkan Kuromatsu.

All Murashige's are made with 80% polished rice and No. 8 yeast.
They all claim to be dry, but they all have a strong acidity. Dry? I have the impression that they are all dry. Isn't it too hard to sell this as dry?
The sake level is said to be about +4, so it's too subtle to be called dry....
They said they might not make it next year because it won't sell well. I think it's not enough for the dry sake drinkers and the label is plain and unattractive 🤔.
Personally, all of them are delicious with good acidity, so I decided to buy one of them.
The Kyokusen was delicious for its high price, but I was surprised to hear that it too had 70% stars 😳.

Recently, the brewery has been brewing "eight knot," which is a push for No. 8 yeast, as well as the old-fashioned Kinkan Kuromatsu.
This time, we had junmai and junmai-ginjo from MURASHIGE.
The junmai has a classic feel, and is a clear, royal-style sake with an assertive umami flavor, but it does not have a "sake" feel to it, making it perfect for a mealtime drink.
The Junmai Ginjo was a little less impactful than the Junmai Murage 😅. 千鳥足Sleepy healer, excuse me for repeating myself🙏.
