Iwakuni, Yamaguchi Prefecture. Murashige Brewery Co.
MURASHIGE Junmai-shu, dark mellow and dry.
Purchased at the Takashimaya Sake Festival last September. The brewer was probably the person I talked to the longest at the booth.
It is a strong sake with 80% polished rice and No. 8 yeast. It is an unusual sake, rich but dry 🤣.
I heard it is very hard to sell at special dealers.
It is served cold.
The color is quite recognizable yellow. They say it is aged at low temperature, so I guess it is Maillard.
The top aroma is caramel-like and honey-like. I quite like the aroma 😋.
The mouthfeel is slightly tart. Immediately you can feel the acidity on the tongue.
The taste is sour at first, but when swallowed, a rich, mellow sweetness spreads on the palate with the aroma of burnt caramel that passes through the nose. It has a rich, mellow, sweet-savory flavor and a slight sense of maturity.
After that, the acidity tightens up again from the tip of the tongue, and there is a slight spiciness that gives it a slight kick.
The sourness is impressive and does not give the impression of being dry.
It's a very interesting sake, but it's a shame they won't be making it any more this season 😭.
Ingredients: Rice (domestic), Rice malt (domestic)
Polishing ratio:80
Alcohol Content:16%.

Hi Nemuchi 😃
Speaking of Iwakuni, Kinjaku is the most famous sake in Japan, but I didn't know there was such an interesting other sake 😳I should have drunk it this time at Takashimaya 😌.
I have to drink the type of sake that doesn't sell well or it will be gone.

Hello, Nemuchi 🐰
I like Murashige Sake Brewery and tasted their sake at Takashimaya Sake Festival. I especially like the 8not series more than the Murashige label, so if you have a chance, please try it🎶.

Hello Nemuchi 😃
I think it's so sour that if you ask for a dry one at a pub and they serve this one, you'll get angry 🤣 Well, I like the perversity of it 🤣.

Aladdin, good evening 🌛Murashige was a brewery that didn't impress me with their 2022 sakespu, but I was very impressed with their new production 😋 They are so particular about it that they couldn't sell it 😅I want to support them since they are reviving #8 yeast 😊.
