This is another Murashige sake brewery that I was unaware of.
Recently, the brewery has been brewing "eight knot," which is a push for No. 8 yeast, as well as the old-fashioned Kinkan Kuromatsu.
This time, we had junmai and junmai-ginjo from MURASHIGE.
The junmai has a classic feel, and is a clear, royal-style sake with an assertive umami flavor, but it does not have a "sake" feel to it, making it perfect for a mealtime drink.
The Junmai Ginjo was a little less impactful than the Junmai Murage 😅.
