I had it in the fridge, so I started drinking it when it was about snow cold. It has a sharp citrus and freshness from the first sip. Slightly gassy. Delicious! However, it certainly seems a little different from last year.
Drink slowly and the temperature rises to room temperature. The mouthfeel becomes mellow and sweet. It tastes like white grapes. However, the sharpness of the aftertaste is not so different!
Last year, it was fire-aged, but I remember that it had a sweeter sake punch on the palate and a sharp aftertaste.
This year, the crispness of the aftertaste leaves a refreshing lemon-like acidity.
I wonder if it will be available in the next month or so. I'm also looking forward to the fire-brewing. I wonder if I can buy it at the right time?
I couldn't find the character for "sozan" in Kazan-zozan, so I searched for it on the Internet. I liked this character. (4th photo) Nanka YokaiI bought it as a souvenir to visit a relative's house.

The prototype is a delicious sake with a sweet and sour taste like white grapes, and it was well received by everyone 🙌.

Although it may not be what one expects from a nama sake, it seems to have a large width, so if it were to expand a little more, it would have a taste that I personally prefer, combined with the texture on the tongue. I will give it some time before drinking.

I feel that I have been drinking only unfiltered nama sake lately. It can't be helped since this is the season, but I have the impression that drinking only nama sake narrows my vision. I would like to enjoy it while mixing in a moderate amount of fire-aged sake as well. こうたろうLajomon Malo.
Lajomon Malo" is a sake with a well-balanced sweet and sour taste derived from lactobacillus acidophilus through "malolactic fermentation", which is a wine brewing technique incorporated into Japanese sake.
The location of Hirakishimizu further doubles the taste.
