The graduation ceremony for the first class of students that we took on as a lab, and I was allowed time to reflect on one of them at the end of the ceremony. The accompaniment was Kido. It has a certain smoky aroma, a pungent taste, and a bitter sweetness that melts 🍶✨It is said to be named after the child of Mae-oni Goto-oni, an attendant of Yaku-gyosha. I only know the manga "Touge Oni," but I would like to walk the journey like Touge Oni with my next students.

The guest next door, the waiter, and I had a sake discussion 🍶. The brand I'm interested in is on the left side of the cold storage. HIROKI and JIGIN are lined up! The price is a little expensive! But I've never had it before, so I asked the neighbor to pour it for me! The aroma is unique and quite strong! The taste is also very good! Old wine? Nutty? It was quite cold and this is what it tasted like! My neighbor said it might be better heated up. I enjoyed it slowly, enjoying the gradual change in temperature. Three glasses of sake, and tonight I enjoyed a beautiful cup of victory! On the road back to the hotel, we saw a trailer carrying tanks! It was a scene typical of Chitose, where there is a US military base! The day after tomorrow is Kagoshima! extensive knowledge Rice: Yamadanishiki (Hyogo) Yeast: Akari yeast Polishing ratio 50%. ◇Alcohol content: 18 Continuation of a brewery that has been in existence for 170 years. Nagare Kasumi" named after the feeling of intoxication like flowing fog Nagare Kasumi" is a synonym for ancient sake, and this unpasteurized sake was released by Yoshihiro Takagaki, the seventh generation toji, who was a leader in the industry. It has now been passed on to the next generation of Touji.

This restaurant is crowded tonight 🈵🈵. Almost full 🈵. The guest next door and the guest next door are drinking this! Looking at the label, it looks similar to the one I had the other day in Sapporo! I asked for one too! The difference between Yamadanishiki and Aizan! The rice polishing ratio is also a little different! So what does it taste like? It was a delicious sweet sake with a pineapple flavor! I found it more to my liking than the Yamadanishiki! There are quite a few sakes in the cold storage! There were many brands that I was interested in just within sight! Let's savor the afterglow of victory with sake a little longer! By the way, this year's Nippon Ham Fighters are not flashy, but we have high expectations for them. ⚾️ knowledge Grade Junmai Daiginjo Rice used: Aiyama (Hyogo Prefecture, special A district) Polishing ratio 45 Degree of alcohol content 16 This sake is made by blending the "Arabashiri" portion, which comes out at the beginning of the unrefined sake, and the "Oshikiri" portion, which comes out at the end of the process of squeezing. As the name suggests, the "Arabashiri" has a rough attack, but the aroma is strong and the taste is light. Oshikiri is also called "seme," and is accompanied by the nigori portion of the unrefined sake, which gives it a thicker flavor. This is a bottle in which you can fully enjoy the melon-like gorgeousness and freshness that is typical of Hououmida. The blend is a masterful one, making the most of the characteristics of each.

Congratulations to the World's Best in the WBC: ㊗️ Also, today we went to the first night game at Escondido Field, the new home of the Nippon Ham Fighters! It's an open game with home runs by Imagawa, Kiyomiya, and Mannami and a series of fine plays, but to celebrate the victory, we went to Sake Bar Yamamoto-san in Chitose! Since we visited last year during the heavy snowfall I wanted to ask for Jyushidai for the commemorative sake for the Yamagata 300, but there was no Jyushidai available tonight! Then what do you have for Yamagata sake? Yamahoshi. I don't know much about it, but I asked for this one! I've never had aluzoe before, but it's delicious! Yamagata sake is my number one ranked sake! It competes with Akita sake, but Yamagata is unbeatable! Escondido Field is a must for baseball lovers! Easy to see 😊. great knowledge Sake quality Daiginjo-shu Alcohol 16 Sake degree +3 Polishing ratio 50%. Rice used: Yamagata Yuki-No-Megami

Thank you, T.KISO 😊. I have been drinking Junmai, Jungin and Jun Dai for Yamaboshi. This was my first time to try Daiginjo and it was very good. I think I will drink a lot of Akita and Yamagata sake in the future 🍶🍶.

I couldn't help but notice the brilliantly shining bottle in the top left corner of the cold storage room. I looked it up, and of course I've never drunk it or seen it in person. I was advised by etorannzyu to order it when in doubt, so I decided to have it as my last drink. I've had many Jyushiyos in the past, but this was my first Junmai Daiginjo. It's really good! It's really good😋. I can't taste any miscellaneous flavors at all. Fruity! An excellent after-dinner drink! The staff at the restaurant didn't try to talk to me, so it was a nice place to relax and enjoy my time. I don't usually stay in the Chitose station area, so I have to be thankful for the snow storm 🥲. But it's still very cold outside😵 knowledge This is the first bottle of daiginjo from BY for the competition. You can enjoy the fresh aroma and flavor unique to new sake.
