This is mainly my impression after one week of opening the bottle. About the aroma Immediately after opening the bottle, the aroma was pear-like, but after one week, it had a rich, matured aroma of melon and cheese. The ripeness of the aroma became dominant, and the peariness was not so much felt. About the taste The taste is mainly a rich, ripe, slightly sour taste like melon and cheese. I think the acidity and ripeness are slightly more dominant than the sweetness. However, the sweetness is not overpowered by the richness of the flavor. The sweetness has increased from just after opening the bottle, and the lingering sweetness and aftertaste seem to have lengthened. The aftertaste continues to be cheesy, and the bitterness remains at the end. The overall taste is richer, and the carbonation is still there even a week after the bottle was opened. It is much richer than the Orange Sea, which I drank at the same time. I am not so sure about the taste and aroma, so if you are interested in this sake, please take a look at other people's postings.

Sorry for the plain photo. Here are my impressions two weeks after opening the bottle. The aroma is of watery pear with a slight muscat-like nuance. The taste is different from the impression of the aroma, but when you drink it, you can taste the umami and sweetness derived from rice. The fruity taste that the aroma suggests is not as strong as it seems. In the aftertaste, the sweetness disappears first, leaving behind the umami of rice, a little bitterness, some astringency, and acidity in the mouth. The carbonation was quite strong right after the bottle was opened, but the fizziness remained a little after a while. Overall, the sweetness is strong, but the sharpness is good. It is a very tasty sake.

Sorry for the colorless pictures. I am posting them as a reminder. Here are my impressions after drinking it right after opening the bottle. The aroma impression is melon, a little bit of grapes without astringency. The aroma is creamy and rich. The taste impression is the same as the aroma: ripe, rich melon flavor. Perhaps because the melon-like flavor of dark ripe fruit is stronger than the sweetness, the sweetness is less pronounced than in other Kangiku sake, and the flavor is more prominent. In the aftertaste, the sweetness seems to disappear more quickly than in other Kangiku sake. (It has a good sharpness.) Even after the sweetness disappears, the taste of ripe fruit, like melon, lingers in the mouth until much later. Slightly effervescent. The overall impression is full-bodied. Needless to say, it is insanely delicious. Postscript, my impression after 1 week of opening the bottle. The melon-like aroma and sourness have become stronger. Compared to the same Kangiku Kenaiyama, this one has a more refreshing and crisp aftertaste.
