Amabuki by Amabuki Sake Brewery. Purchased at Combox Saga Ekimae. Most of Saga's sake is either dry or medium-hard, but I bought this one because of the unusual note "Nakaguchi" (medium). It is indeed crisp and easy to drink, but has a gentle taste with a strong rice flavor.

Junmai Daiginjo Nama Sake. It has a full, sweet rice flavor on the palate, but is crisp, spicy, complex, and rich as it slides down the throat.

Sasaiichi Junmai Ginjo is my favorite sake, with a gentle and rich sweetness of rice. Brewed only with Yumesansui, it has a clear taste like a Burgundy wine.
