The brewery is located in Ichigai-machi, Tochigi, and focuses on making sake using special A Yamada Nishiki from Hyogo Prefecture, and has a strong following in Utsunomiya. This sake is called Junmai Namaishu and I was expecting a strong taste and a gassy feeling, but I was wrong in a good way. I was about to gulp it down cold, but I held back and watched the temperature change, and it's best served hot!

Ordered at "Senda Izakaya Ohana" which serves Seri-nabe in Sendai City. It's lightly nigori-like, but strangely it doesn't interfere with the meal, but the aroma is mild but still very strong and delicious #Miyagi #Hakurakusei #Japanese sake #Sake #ricewine

It is indeed smooth on the palate and easy to drink for a junmai sake. It has a faintly rich aroma, and can be paired with red and white fish sashimi, nabemono, cheese, or anything else without getting in the way. The design, including the flat polishing of the rice, must have been very precise. It's best served warm, but the label says to serve it at a higher temperature. The label says to heat it up to a higher temperature, perhaps to encourage people who don't like the sensation of heated sake coming through the nose.
