Inaba Shuzo, located in Tsukuba City, is another long-established brewery, and has been brewed since 1999 by Nobuko Inaba, the 6th head brewer of the brewery.
◉男女川 Shiboritate Junmai Ginjo Unfiltered
This is one of the most difficult to read brands to come out in a while. It is a hard to read brand name that has been around for a long time. It is light, refreshing, and slightly citrusy. It's just the way I like it.
◉Sutera Junmai Daiginjo Unfiltered
I thought the name sounded like a car, but it turns out to be Sutera. The taste is clear and uncluttered, with a harmony of sweet and savory flavors. The slight bitterness in the flavor is also a nice accent.
I looked on the Internet and found out that it is a new sake created by the brewery's toji, and that all Sutera is junmai daiginjo, brewed only in seven tanks each year, and that each tank has a different flavor.
When I told Mr. Bouken that the Sutera was delicious, he replied, "I'm in trouble. There were too many things I had to drink. boukenThe 1920's National Sake Fairs

I've always wanted to try this one.
I've been wanting to try this one for a long time.
The first sake brewed by a female brewery master in Ibaraki Prefecture.
According to the official website and the liquor store's website, both are unfiltered and fire-aged. It looks like there is a draft version of both.
We drank
Male-Female River Shiboritate Junmai Ginjo Unfiltered
Polishing ratio 55% Miyamanishiki 15-16 degrees Sake degree +4.0 Acidity 1.5
Amino acidity 1.2 2090 yen
We thought it was a draft sake, but it seems to be a fire-brewed sake. It is light and has a good balance of umami and acidity. It seems to be evenly balanced. Delicious!
Sutera Junmai Daiginjo Unfiltered
Polishing ratio 50% Yamadanishiki 15-16 degrees Sake degree +1.0 Acidity 1.3
Amino acidity 0.7 2,750 yen
Fruity, sweet and delicious. It has a clean and smooth taste.
There are no unpleasant parts, and it is good and easy to drink.
Both Inaba sake breweries are very good!

Ibaraki Airport, where I was on my way to and from my trip in October‼️ I came back in the afternoon and ate some airport ramen, which was expensive but delicious 😋.
There was an empty bottle of Kiri-Tsukuba on the counter, so I wondered if I could buy it here 😳, but they didn't sell it at the store 🥲.
Then I found this one at a convenience store in the airport (for some reason there is a Seicomart in Hokkaido both around and inside the airport) and got it👍.

It's a local sake from Tsukuba, Minanogawa (‼️).
I'll have a glass of cold sake first 🤗.
After half of the sake, we moved on to warmed sake! The rice flavor can be felt well 🌾 and it's delicious ☺️
The Ibaraki airport, which I used for the first time this time, is conveniently located close to my house and I can park my car there for free.

Hokkaido's strongest convenience store [Seicomart], there are still stores in Ibaraki and Saitama outside of Hokkaido as a remnant of the former chain ✨.
