Delicious. Certainly different from before.
I was surprised to find Mikotsuru, which I brought back from Okaya as a local Suwa sake 8 years ago (1998), at a nearby sake shop.
The owner of the liquor store told me that it was probably very different from the old one, so I bought it as he recommended.
And it tasted just as I thought it would.

Light at 13°. Bitter taste.
This is a local Suwa sake found at a liquor store near Okaya Station on the way home from a business trip. (Third bottle after Kamito and Takaten.)
The name left an impression on me, and I remember being surprised to see it eight years later at a nearby liquor store.

First encounter a brand from Nagano, being recommend by a friend, (Cindy San) from Nagano. A brewery that makes more of a Junmai class sake. This kinmon Nishiki, uses soft water 💦 to make its brew. Super drinkble, soft aroma, when down a choko, it glides down your throat. Without any resistance (Sibarashi). The sake that I drink, is also a sake that I sell. Heard of it, the brewery has cease operation. Here's the spec....
