This is an all-Fukui Junmai Daiginjo made with the prefecture's own rice, Gohyakumangoku, also produced in the prefecture.
It has a cucurbit-like aroma and a mouthfeel reminiscent of bananas. Yet, the taste is well-balanced without being cloying.
It is indeed a representative sake of Fukui.
