An acquaintance gave me some sake from Fushimi, Kyoto. It's raw sake, but it's not sweet, it's refreshing, and the aroma is fruity. It's what we call dangerous. It's the kind that goes in easily. It's delicious!

I was recently introduced to this app by an acquaintance, so I'll be posting retroactive dates as well. Kitayuki is a sake from Sado Island in Niigata Prefecture. The concept of this sake is to make a drink that will hit you hard in the throat, but with a refreshing aftertaste, and that you won't get bored with even if you use it every night. If you want to drink it every day, you want it to be refreshing and to feel the taste of rice. It is the kind of sake you want to keep at home. The stability is not hampered. It's delicious!

This is Ikatamoto Junmai from Nihonmatsu in Fukushima Prefecture. It is made from only rice and rice malt. It was founded in 1752, the second year of the Houryaku era. It has a powerful flavor that only a traditional sake brewer can produce, and it is a perfect complement to any dish. It was the best marriage. We had it with seared horse meat, duck and smoked bonito.

I tasted this sake at a department store in Osaka a long time ago and wanted to try it someday.
