This is Ikatamoto Junmai from Nihonmatsu in Fukushima Prefecture.
It is made from only rice and rice malt.
It was founded in 1752, the second year of the Houryaku era.
It has a powerful flavor that only a traditional sake brewer can produce, and it is a perfect complement to any dish.
It was the best marriage.
We had it with seared horse meat, duck and smoked bonito.
