This sake is from Fukui City, Fukui Prefecture. Formerly a Tokyo-Hachioji sake (moved to Fukui in 2003). I bought it at the brewery when I went back home. I am sincerely grateful to the brewer for his kindness in spite of my sudden visit. Incidentally, they also seem to make vodka, and there were bottles of various flavors of vodka lined up in a row. First, a cold one. The aroma was cool and refreshing, and there was also a sweet and savory aroma like sweetened chestnuts. The taste is quite unique! Caramel aroma and sweetness like maple syrup! A sharp, wild spiciness that chases behind it without a pause! The aroma, sweetness, and spiciness each stand out in their own unique way, which is quite nice. However, when it is served with rich snacks such as pork belly or bonito, it leaves the savory taste and goes along with the rest of the snack. Interesting. How about if you heat it up? The spiciness leaps out smoothly. The spiciness is soft, and the sweetness backed by the spiciness blooms! The sweetness opens up, making it more like maple syrup. It's an interesting sake that doesn't waver whether it's served cold or warmed. As usual, I went on a sake shopping spree on my return trip to Fukui. When I finish all the sake I bought this time, I will have bought all the existing sake breweries in Fukui!
