So, today I drank a bottle of Sakasui no Yoruake.

In fact, I gave a business partner a bottle of Sakasui no Yoake three years ago, and he was so hooked on it that he bought a large quantity himself and drinks it himself.
When I told him what I thought of this year's bottle, we had a bit of a disagreement, and the other party offered it to me in return, saying that he thought the taste would be different if the lot or tank was different.
I tried drinking it, and my impression was the same.
It may be that people who mainly drink red wine and I, who mainly drink sake, have different senses of taste.
