100% Yamada Nishiki, Polishing ratio 60%.
It is dry and mellow. The color is slightly Yamabuki. This mellow type (Inaho feeling?) I think this mellow type (Inaho feeling?) is common in Kyoto sake🤔.
There is no bitterness, and it is crisp and dry. I think it's delicious, but it's a little out of my taste as a fresh fruity lover.
I imagine it would go well with fish stews😌I want it at the end of the day!
On a cold day like this, I want to drink something warm. That's why I've been enjoying a lukewarm glass of Holy Tadaho.
It's slightly sweet when you put it in your mouth, but after it goes down your throat, it's crisp and dry. The acidity and subtle bitterness combine to create a well-balanced taste.
Serve it with kawahaagi (leatherfish) liver.
