Second time brewing Pukupuku, this time DDH. This time it was DDH, and although I accidentally shook the bottle before opening it, it opened without spilling. The aroma of hops is mild, and the sourness of lactic acid bacteria is stronger than that of DDH. The gasiness is gentle, with a strong sweetness and acidity that is typical of Doburoku. The sourness is especially strong, similar to that of sour ales. The sourness lasts until the end. This time, the doburoku feeling is quite strong, almost like vinegar at the end. Quite distinctive. It may not be easy to sip.

Next up was another oddball. We opened a bottle of craft saké from Pukupuku Brewing, which we had been curious about for a while. After opening the bottle with a corkscrew, I poured it normally. At the end, there was a very thick liquid.... It seemed to be almost a dobrok, so I stirred it in a hurry. When I took a sip of it, I could smell the nice aroma of hops. It also has a strong grapefruit flavor. It also has a nice shwashy taste. There is almost no sweetness, but mainly sourness, almost like a beer. In the latter half, the bitterness becomes stronger and stronger, and at the same time, the delicious taste of rice comes out and it finishes crisp and clean. It is such a unique sake that if you were to drink it blindfolded, you might say it was a beer or a grefleur sour. The alcohol content is 6 degrees, but it is quite intoxicating.

Hop Doburoku from Pukupuku Brewing Sourness of lemon and bitter aroma of grapefruit. I don't feel the sake flavor that much. The last thing that leaves your nose is beer. Oh, the sweetness is not so much. I love it 90 points. However, it is not my favorite sake.

Another bottle of craft saké today. This is a hop saké from Pukupuku Brewing. A brewery that doesn't have its own brewery, this saké was made by Sasaki Brewery! This time we got the third of a four-part series. It's the complete opposite of the craft beer I mentioned earlier. Sake is flavored with hops, and this sake is made with Mosaic hops, which have a tropical fruit-like aroma. First of all, the label is just too damn cute! When you open the bottle, the aroma is gorgeous, with a fresh aroma of hops mixed with a dark sweet and sour aroma that is something mysterious. Then, a sip. Based on the tropical taste of dark white wine, the aroma of mosaic hops is elegant and gorgeous on the nose. The slight foaminess and bitterness of the hops give it a refreshing and pleasant aftertaste. I also enjoyed Kirataso's warmed sake, and based on the information I received, I decided to try it warmed. It is indeed possible. The sweetness becomes lighter, but the original flavor is still there, and it's certainly delicious ^ ^. I was thrilled to try it, but it was delicious! How wonderful is the aroma of hops? I can't buy it anymore, can I? I hope to encounter it again someday.

This is the second one. This is the 1st bottle of Junmai sake as Pukupuku Brewing ✨. This Junmai sake is made from 100% Koshihikari rice 🍶. Even though it is a low-polished sake, it is very fruity and you can feel the sweetness of the rice, and it is easy to drink because it has just a touch of acidity. It is also mild when heated to bring out the flavor of the sake 😋😋😋😋. Personally, I think it is my favorite.
