Noto Toji and Ishikawa Gohyakumangoku. It is one of the best sake which is major in Ishikawa but unknown in the whole country. Kanazawa Nakamuraya. It is dry.

Drinking outside is wonderful. Gorin, a famous sake. The royal road of mellow Kaga Kikuhime. Umami and sharpness. Complex taste. Goes well with sashimi.

The second was Banshu Issen Aizan. Aizan is usually sweet, but this one is refreshing. It goes perfectly with the fat of nodoguro sushi.

Formerly Aiji Shukei-machi, now facing the river. Delicious sushi and sake pairings. Topping the list was Ichihakusuisei Miso Nishiki and firefly squid. The richness of the firefly squid and the mild sweetness of the Ichihakusuisei are a nice finish.
