Fruity aroma, sourness and umami in the bitterness, as time goes by, bitterness settles down and umami is strongly felt. I enjoyed drinking it while enjoying the changes in flavor.

Aroma, taste, sake-like sake.
Immediately after opening the bottle, it was still too early for me as a sake novice who likes sweet taste 😅.
Dry, strong bitterness, clean and crisp aftertaste
It would go well with sushi or raw fish dishes such as nameko mushrooms.
3 days after opening the bottle, the taste has mellowed and I can feel the umami and sweetness and I can enjoy drinking it myself 😊.

The first sip is spicy and alcoholic, but it mellows out as you continue drinking.
I preferred the taste as I drank more and found it delicious.

Sparkling is good. It goes in smoothly. It's not too sweet and it's very straightforward to drink.
In spite of the label that says "be careful of blowing out," it is lightly cloudy.
I chilled it in the refrigerator, shifted the underside every day, and opened it the day my son and daughter-in-law came home.
The alcohol content was a little low and everyone seemed to find it easy to drink.
