It was a beautiful day, so as we were driving to the beach, we spotted a sign for the local Itoshima Sake Brewery's Sake Brewery Opening, so we made a quick stop. This year, due to Corona, they were selling new sake in a drive-through format.
This sake was paired with my own favorite, Tanaka Rokujugo.
This sake, which was made with the next 100 years of Itoshima Shuzo in mind, was wonderful, with a freshness that was typical of namaishu, and a long aftertaste of umami that followed.
I can't stop drinking it again.
