I missed out on the new Kudoki sake I used to drink every year, so I bought this one from my hometown in Shiga.
A bottle of 50% polished sake was about 2,400 yen, right?
I was dazzled by the cost performance 🤣.
100% Yamadanishiki produced in Shiga Prefecture
Polishing ratio 50%.
Alcohol: 15 degrees Celsius
Slightly gorgeous aroma, a little fruity, soft acidity and umami, and a little spiciness.
I was surprised that it is not too sweet because I have an image of Shiki being sweet 😳.
I was looking forward to see if it would get sweeter after 3 days... 🥺.
So I decided to try heating it up.
I tried various temperatures, but the alcohol and pungency were too strong 💦.
I found it easiest to drink when heated.
So on the 4th day, I tried heating it again.
It was not as sweet, but the acidity and umami combined nicely to make a delicious, slightly fruity sake 😆.
Thanks to this, it's going well 🎶!
I'm looking forward to drinking it again today!

I've been slacking in the second half of the year, but I'll do my best next year, including the ones I've accumulated 😂.
