This is already sake! What is Yamahai? I'm amazed! The American Touji is a master! The label says that the sake is made with a traditional Norwegian yeast called "Gjærkrans", which is a Norwegian traditional Rhys type yeast. I hear that they are going to cooperate with Hakkai Sake Brewery and start brewing in earnest from now on.

Sake (and other brews) brewed in Brooklyn, New York with New York water and California rice Hops, which are not allowed in Japan under the liquor tax law, are used. The taste is similar to that of lychee, which is unique to hops. Taste similar to Kido's Fusion Sake Sake brewed with American rice It's amazing that something of this quality is made in the U.S.

Occidental The sake itself is pink. I wonder if it is red rice? It contains hops and the flavor is similar to that of gin. Personally, I like it. #Young Dawn 2023

Chilled Dry with a little bit of bite on initial taste. Rough almost carbonated mouth feel and a bit of bracing bitterness on the relatively quick finish. Maybe a hint of grape (but not in a wine kind of way) Overall good but seems to lack a strong distinguishing character.
