National Sake Fair 2025 in Osaka㉓ Ibaraki Prefecture Booth ⑬ Hiyama Shuzo is a brewery in Hitachiota City that also produces wine and shochu. The "Senhime" brand is also made by Meijo Shuzo of Hyogo Prefecture, a member of the Belluna Group. Sen Hime Junmai Ginjo The sake has a thick, almost muddy taste, with a hint of off-flavors, which I don't like. Asahi Masamune used to be the main brand name, and a check of their website shows that they still make Asahi Masamune. I expect this to be a hunt for Masamune hunters!

National Sake Fair 2025㉒ Ibaraki Prefecture⑬ Hiyama Sake Brewery in Hitachiota City A brand completely new to me... I heard that wine is their main product rather than sake. Hitanishiki, 60% rice polishing ratio, 15%, 1,650 yen When I searched for this sake, I found reviews and descriptions saying it was fruity, but I didn't find it very fruity. It has little sweetness and umami, and is a refreshingly light and dry sake. Well, it tastes a little strange...

It is called "Kaoru-shu," which means "fragrant sake," but the good smell of sake spreads in the mouth and has a slightly pungent impact on the throat. It is easy to drink and smooth on the palate.
