Sake? Western sake?
Amber color like whiskey. A strong aged aroma like western sake or old wine. The attack is thick, with strong acidity and sweetness. The aroma is like pear and sesame, and the strong sweetness is felt near the throat before it finishes.
It has an impression of a more intense flavor than the Amefall that we recently drank. I drank it on the rocks, but it still has a strong flavor. It seems to be a good match for an after-dinner drink such as Cointreau.

Needs to mature
The secret recipe of the "Snow Kayasha" was rumored to be very tasty at a liquor store. Found it at Bic Camera and bought it.
It has a light yellowish color. It has a strong aroma with a pineapple-like sweetness. It also has an aroma of kumquats. From the very mellow attack, the sweet umami flavor spreads, followed by a hint of aroma like that of iburi gakko, acidity, and bitterness, and then it finishes with a slight spiciness.
On the first day of opening the bottle, I wondered if it was really as good as it sounded, as it was much sharper and spicier. I wondered. A week after opening the bottle, the corners were removed and it became very mellow. The degree of mellowness is like that of Born Gold, which is the most recent wine I have had. The aroma and flavor spread out, and I was convinced that this was the original deliciousness. It was a bottle that made me feel the depth of the taste change.

The serenity of firefly watching
Aroma is a mix of pear, herbaceousness. From the mellow attack, it is smooth with a sense of minerality, and the flavor gradually emerges. When swallowed, a hint of pear aroma is softly fragrant, and while the sharpness as a taste is clean with a sense of alcohol, the lingering aroma lingers.
The aroma of damp grass before summer, though it cannot be said to be grassiness. Walking near a stream on a quiet night. Just as my eyes become accustomed to the darkness, I see a flash of light. Just when I think I'm imagining things, another yellowish-green light swoops in and dances around. It is a firefly. Following the afterimage of the light, other fireflies also swoop in. Before I knew it, there were so many fireflies flying around that it was like an art of light. This Hyakumoku Junmai Ginjo is as gorgeous as the fireflies' dance as it turns from smooth and quiet to gorgeously fragrant.
I like this kind of flavor. It reminds me of Ichigorai by Kuroryu. It comes in quietly and blooms in the latter half of the bottle. It is perfect as a food wine. I paired it with steamed chicken breast in a sweet and salty soy sauce sauce sauce. The simple part of the breast meat and the sweet aroma of the sauce matched the sake. It also gives the impression of being a special edition of Kiku-Masamune's Ginkap.
Mellow, fluffy wonder sake
It has a unique aroma like feathers and incense. From the very mild attack, after a refreshing feeling, a sweetness gradually arrives, and the overt aroma is like a feathery scent similar to the overt aroma. The aroma is smooth and clean, leaving a slight sweetness.
It was such a strange taste that I had mixed feelings and could not explain it even when I tried to understand the flavor. The quality of sweetness is delicious. The aroma is unique, so there are different tastes.
Purchased at Bic Camera Okayama Ekimae. The selection is quite good and differentiated from other stores, which is attractive. The location makes it easy for people from outside of the prefecture to stop by and buy.
The store is located in front of Okayama Station.
