This sake is supposed to be R4BY sake as they change the production around February every year.
I tried to ripen it a little fresh 🤭.
The top aroma is a sweet ginjo aroma that is mellow and rich.
In the mouth, it has a rich and mellow umami and sweetness with a chiri-chiri acidity.
It has a ripened feel and in a way it is not like Aomori sake, but it was a delicious sake with a deep flavor 😊🍶. まつちよHachinohe Sake Brewery has newspaper sake not only for Hakutsuru but also for Nyoku.
The initial aroma is faintly fruity and sweet.
In the mouth, there is a pleasant acidity with a nice crispness and a mild umami and sweetness.
It has a good sharpness and is a perfect sake for a mealtime drink.
It was delicious 🍶✨. まつちよI drank a draft Donburi last month, and this time it will be a fire-aged Donburi 🍶.
The first aroma is sweet with a hint of acidity, like that of sweetened yogurt.
In the mouth, it has a slightly sweet and sour taste like Calpis with a milky rice flavor.
It finishes with a hint of sourness.
Compared to the freshness of the raw sake Donburi, it does not have the same freshness, but the fire-quenching process makes it more rounded and mellow, and it seems a little sweeter despite the same specifications.
The lactic acidity like yogurt was unexpected, as I did not feel it in the nama-zake.
Personally, I think I prefer the hi-ire over the nama-shu.

Last sake ordered from Kurumiya in Hachinohe.
I thought I couldn't buy it in Kansai, but Daimaru Umeda store had it😅.
I thought it was only for special dealers, but it seems they also bring it to department stores for tasting and selling.
This is the first time I have tasted a rice called "Golden Wind". It has a gaseous taste and a rich sweet flavor. It has the feeling of an adult's soda. There is a lingering taste of rice.
If the gas is reduced, it tastes good, but the characteristics are weakened and it becomes a common taste.
If I see it again, I will buy it.
The font and layout of the label is very similar to Tenka's. I wonder if they are related? Is it related to the same design company? And the shape of the sake lid is the same. 
boukenI found a sapphire fire-roasted one at Yamaya before and it was so delicious that I ordered it from Kurumiya in Hachinohe. I can't find Rokune in Kansai.... I don't think Yamaya carries it on a regular basis.
