さわA new craft saké brewery was established in Oga, Akita Prefecture in September 2021.
They are a sake brewery that brews other brewed sake such as doburoku, as new entry of sake production is not allowed.
The "Rice and Hops" we drank this time was made with hops used for making beer, and is a sake-like alcoholic beverage with a hop aroma and taste.
This is delicious.
Rice used: Sasanishiki 92% polished rice
Alcohol content: 13%. さわBecause 100% koji rice does not qualify as sake under tax law, sake is brewed with 96% koji rice and 4% rice. Therefore, the name of this sake is almost exclusively koji kamigase, which is the product name written in katakana.
It is a sake like a white wine with a good balance of flavor and acidity drawn from the koji.
Rice used: 100% Koshitanrei produced in Kashiwazaki, Niigata Prefecture
Alcohol content: 12%.
